๐ฉ๐ณ Preparation Steps
๐ธ Step 1: Marinate the Mutton
Start by washing the mutton thoroughly. In a large bowl, add salt, turmeric powder, red chilli powder, and mustard oil. Mix well.
Now prepare a coarse paste using whole red chillies, garlic, black pepper, cumin seeds, and coriander seeds. Add this freshly made spice paste to the mutton.
Add sliced onions and mix everything nicely so that the mutton is well coated. Let it marinate for at least 30–60 minutes (longer marination gives even better flavor).

Place a cooker on medium flame and add mustard oil. Once the oil is hot, add bay leaves and whole red chillies.
Now add the marinated mutton into the cooker. Mix well and cook on a low flame. Keep stirring occasionally.
Cook until:

This slow cooking step is very important as it builds deep flavor.
๐ธ Step 3: Final Flavor Touch
•In a small bowl, crush black cardamom and cloves. •Add them to water and pour this into the mutton.
