Soft & Spongy Dhokla – A Cozy Breakfast Start

 Some mornings feel extra special when breakfast is light, warm, and homemade. Freshly steamed dhokla with its soft, fluffy texture and gentle tempering of mustard seeds makes the perfect start to the day.

I love making this dhokla when I want something quick yet comforting for my family. It’s healthy, easy to prepare, and doesn’t feel heavy — just perfect with a cup of chai or a glass of milk for the kids.

Simple ingredients, soft texture, and that homely aroma filling the kitchen — this breakfast truly feels like comfort on a plate 💛

Ingredients

For Dhokla Batter:
1 cup besan (gram flour)
1 tbsp semolina (optional, for texture)
1 tbsp lemon juice
1 tsp sugar
Salt to taste
1 tsp eno / fruit salt
¾ cup water (as needed)

For Tempering:
1 tbsp oil
1 tsp mustard seeds
2–3 green chilies (slit,optional with kids)
1 tbsp sugar
½ cup water
For garnish:
Fresh coriander leaves


👩‍🍳 How to Make Dhokla
Step 1: Prepare the Batter
In a bowl, mix besan, semolina, salt, sugar, lemon juice and water.
Mix well to make a smooth batter (not too thick, not too thin).
Just before steaming, add eno and mix gently. The batter will become fluffy.
Step 2: Steam
Pour batter into a greased plate or dhokla tray.
Steam for 15–20 minutes on medium flame.
Insert a knife to check — if it comes out clean, it’s ready.
Let it cool slightly, then cut into pieces.
Step 3: Tempering
Heat oil in a small pan.
Add mustard seeds.
Add sugar and water. Let it boil for 1–2 minutes.
Pour evenly over the dhokla pieces.
Serve with coconut chutney or any green chutney.


❤️ Tips for Soft & Fluffy Dhokla
Always add eno at the end.
Do not overmix after adding eno.
Steam immediately after adding fruit salt.
Do not open lid frequently while steaming.
