Let’s learn how to make this simple yet delicious Kadhi Chawal with Crispy Aloo Fry at home.
Ingredients:
For Kadhi:-
1 cup fresh curd (yogurt)
2 tablespoons besan (gram flour)
2 cups water
½ teaspoon turmeric powder
Salt to taste
For Tempering:-
1 tablespoon oil or ghee
½ teaspoon mustard seeds
½ teaspoon cumin seeds
6–8 curry leaves
1 green chilli (slit)
A pinch of hing (asafoetida)
For Aloo Fry:-
3 medium potatoes (sliced into round pieces)
½ teaspoon turmeric powder
½ teaspoon red chilli powder
Salt to taste
2 tablespoons oil
For Serving
2 cups steamed rice
Step-by-Step Method
Step 1: Prepare the Kadhi Mixture
In a mixing bowl, add curd and besan. Whisk them together until smooth so that there are no lumps. Now add turmeric powder, salt, and water. Mix everything well to create a thin, smooth kadhi mixture.
Step 2: Make the Tempering
Heat oil or ghee in a deep pan. Once hot, add mustard seeds and let them crackle. Then add cumin seeds, curry leaves, green chilli, and a pinch of hing. This tempering adds wonderful aroma and flavor to the kadhi.
Step 3: Cook the Kadhi
Slowly pour the prepared curd and besan mixture into the pan. Keep stirring continuously while cooking to prevent the curd from splitting. Cook the kadhi on medium heat until it comes to a gentle boil.
Once it starts boiling, reduce the heat and let it simmer for about 8–10 minutes. The kadhi will gradually thicken and develop a rich flavor.
Step 4: Prepare Crispy Aloo Fry
Heat oil in another pan. Add the sliced potatoes in a single layer. Sprinkle turmeric powder, red chilli powder, and salt.
Cook the potatoes on medium flame, flipping occasionally, until they become golden brown and crispy from the outside while remaining soft inside. The crispy texture of the potatoes adds a perfect contrast to the smooth kadhi.
Step 5: Serve the Meal
Place a portion of steamed rice on a plate. Pour hot kadhi over the rice and serve it with crispy aloo fry on the side.
Enjoy this comforting homemade meal while it is warm for the best taste.
